This stew is delicious, with wonderful depth and complexity, and so are the potatoes. OMG, the potatoes. Yum. HOWEVER… there is not enough liquid in this recipe, so my beef dried out and overcooked. Not having made it before, I was shy to adjust anything, and just trusted the recipe. So, I think you’d need to add more liquid (maybe beef stock?) to cover the beef at the beginning of the 90-minute cook time so that it can reduce down in your partially covered pot but not overcook the beef. The other thing I did was to chop the rosemary that I put in with the potatoes, rather than leaving the rosemary leaves whole. I don’t know about anyone else, but I’m not a fan of eating whole rosemary, as it gets this twiggy quality and is quite unpleasant to me. Anyway, those are my two notes. I will probably make this again with these adjustments.
